
Paju
A larger location with room for a bar allows Paju and Chef Bill Jeong to better serve his clients, while maintaining and enhancing the style and quality he has become known for.

After looking at several potential new locations with Chef Bill, the former Revel Pop-up location stood out with its expanded dining room, space for a bar, outdoor seating, chef's table, and a wood fired oven. Known for his elevated modern Korean cuisine, the ability to support a chef's table and wood fired cooking were exciting developments. Because the space had previously been a restaurant, we were not starting from scratch with the design, but rather refining it to better suit the new inhabitants.



The design of custom casework and the reworked chef's table allow for patrons to get up close to their culinary journey while embracing the same level of detail in the space that they find in their food. The addition of walnut woodwork helps to tie the various elements together (bar top, entry bench, bar shelving, pass-through, and lazy susan) while also providing an elevated experience. In addition to the various design elements, we worked with Chef Bill on the signage and redesign of the existing wood-burning hearth to accommodate his cooking elements. The final result is an elevated experience representative of the kind of sophisticated and modern experience restaurant goers have come to expect at Paju.
