Working at the airport provides its own challenges. Notably, the decision to open the sidewall for windows was more difficult than it seems. While the windows flood the interior with light while also enticing passing travelers, it also needed to accommodate travelers in the waiting areas. Additionally, the kitchen is entirely hidden from view, yet needs to perform perfectly, providing a memorable stop for discerning airport visitors seeking wholesome fare on the go.
