We’re excited to share these holiday cocktail recipes crafted just for you by Beverage Director Bryn Quarles from Artusi Bar. Artusi is the sibling to Italian restaurant Spinasse, in Seattle’s Capitol Hill neighborhood, and features expertly-crafted cocktails and delectable food pairings.
The three drink recipes that follow are based around using a homemade cranberry sage syrup that you will create first. These were designed with the entire family in mind so that there is something for everyone to enjoy. Kids will love stirring the bubbling cranberries on the stove, helping to strain the sauce and then bottle it up. The result is a gorgeous, deep red syrup that isn’t just for cocktails. It can be used to add flavor to many dishes and treats from pancakes to ice cream!

CRANBERRY SAGE SYRUP INGREDIENTS
5 C.
1.5 c.
1.5 c.

.5 oz.
Pinch
Half Lemon
Raw Cranberries
Sugar
Water
Sage Leaves
Lemon Juice
Salt
Lemon Zest

CRANBERRY SAGE SYRUP DIRECTIONS

1. Combine cranberries, water, and sugar in a medium pot.
2. Bring to boil.
3. Once boiling, reduce heat and simmer for 8 minutes, stirring occasionally.
4. Add sage, salt, and zest of half a lemon.
5. Let summer another 2 minutes.




6. Strain through a fine mesh sieve. Gently move berries instead of pushing them into the sieve. This will keep seeds from pushing through.
7. Add lemon juice, cool, and then bottle.
Use the remaining cranberries for cranberry sauce and enjoy the bottled syrup with suggested cocktail recipes on the following pages, over vanilla ice cream, soft goat cheese, pancakes or anything else!

Cranberry Sage Syrup
Angostura Bitters
Orange Peed and Cherry

Stir all ingredients over ice, strain and serve in a rocks glass with a large ice cube.
Garnish with an orange peel and cherry.

SPRITZ

.75 oz.
5 oz.

Cranberry Sage Syrup
Dry Sparkling Wine
Lemon Peel
Measure Cranberry Sage Syrup into wine glass.
Top with Sparkling Wine and ice.
Garnish with a lemon peel.
Pro tip: a quick spritz of lemon juice will take foam so you can keep pouring!

NON-ALCOHOLIC
CRANBERRY COOLER

1 oz.
.25 oz.
.25 oz.
4 oz.
garnish
Cranberry Sage Syrup
Lemon Juice
Orange Juice
Soda Water
Lemon Peel

Measure all ingredients, excluding soda water, into a shaker.
Add ice and shake for 10 seconds.
Add soda water into shaker, swirl contents and pour into a rocks glass.
Garnish with a lemon peel.
